Rejuvenate With This Green Juice Recipe

Sometimes you don’t have time to eat a million servings of vegetables. That’s why we throw a bunch of greens into the blender in the morning so we can start the day with a ton of nutrients, instead of our usual chocolate croissant and espresso.

Award-winning Michelin star Indian chef, restaurateur, and cookbook writer Vikas Khanna has released a new book, Shaken & Stirred, featuring delicious-looking mocktail and juice recipes. The chef has been featured on Gordon Ramsay’s Kitchen Nightmares, MasterChef Australia and The Martha Stewart Show.

If you’re in New Delhi, Foodhall at Palladium is hosting an event with Vikas Khanna on May 7 at 6pm, where he’ll release his new book and demonstrate how to make a few of his favourite drinks. For those who can’t catch the red eye to the capital, try this recipe for Green Machine juice, which uses five greens that give your body essential nutrients and energy. We like to add a scoop of hemp protein powder for an extra boost.

455 g or 1lb fresh spinach leaves
1/2 cup frozen or fresh peas
6-8 sprigs parsley
1 large green apple diced
2 celery sticks
Sweeten with honey or pure maple syrup if desired

Add all the ingredients to a blender and blend until smooth. Poor straight into glasses or strain if you’d like it with less pulp. Makes four servings.
